Last week when I read
this post on
Healthy & Homemade it made me crave roasted chicken. So I decided to make it. I modified a few of the vegetables that were used in the original recipe and changed up some things like some of the herbs, as well as substituting olive oil instead of butter. Either way it turned out delicious and I definitely recommend trying the recipe.
Just because I was in a Suzy Homemaker mood I also decided to round out dinner with hand-dipped chocolate covered strawberries. So good - the only thing missing was a glass of bubbly to accompany it.

Umm, that looks delicious. I love roasted chicken with veggies! And dipped strawberries. You've inspired me to actually cook tonight :)

Whoa look at you going all out for dinner, I've never made roast chicken OR chocolate dipped strawberries hehe. I'm usually lazy and buy the rotisserie chicken at Dominick's, yum.
