chicken meatloaf

"Maaaaaa the meaaaatttloooaaaff!"  Let's be honest, who doesn't love that quote?  More importantly, who doesn't love a good meatloaf?


If you have a hankering for some good ol' meatloaf, I highly recommend Rachel Ray's Turkey Meatloaf recipe.  I modify a few things to make it fit for my family's taste buds and it is absolutely delicious.  If you ever decide you're going to give this recipe a whirl, here are some modifications to explore:
  • Substitute the ground turkey for ground chicken breast
  • Use gluten free bread crumbs, rolled oats, cooked rice or quinoa instead of traditional bread crumbs
  • Substitute ketchup for bbq sauce (I also like to put a total of 4 tablespoons of ketchup which keeps it from getting dry)
  • If you want more veggies add chopped celery to the mix

I've never had a bad experience with this meatloaf and this is definitely a kid approved dish. Enjoy!
