When you live with 2 boys ground meats are part of our daily dinners. One meat that is often overlooked is ground pork and when I'm on overload with beef, chicken or turkey I turn to the other white meat. My go to dish with ground pork, aside from meatloaf, is this chinese ground pork and eggplant dish that is super easy to make.

food (food) | easy sriracha fried rice
When I say that this recipe is easy, I can't emphasize more on the word "easy". This recipe does involve some Trader Joe's specific items, but no worries if you don't have any of them - I'll include the modifications. I probably make this dish at least once a week because on days when I'm running late from work, this can be whipped up in less than 20 minutes.
Here's what you'll need:
- 2 bags of Trader Joe's Frozen Jasmine Rice (Substitute: 4 cups of pre-made white rice)
- 1 container of Trader Joe's Healthy 8 Chopped Veggie Mix (Substitute: 1 bag of frozen peas/carrots combo or 2 cups mixture of your preferred chopped vegetables)
- 4 eggs
- 1/3 cup of Sriracha sauce
- Salt
- Pepper
- 4 tbsp of vegetable oil
Directions:
- Microwave the 2 bags of fried rice or cook 4 cups of white rice. Set aside and cool.
- In a large pan, heat 2 tbsp of vegetable oil and saute the vegetables. Salt and pepper vegetables lightly (1/2 tbsp) and cook until tender.
- While vegetables are cooking, beat eggs in a separate bowl.
- Add white rice to pan and remaining 2 tbsp of vegetable oil.
- Fold gently with sauteed vegetables.
- Lightly salt rice/vegetable mixture and cook for another 2 - 3 minutes.
- Push rice to one side of the pan and add eggs to the other end.
- Scramble eggs on the other side of pan, making sure not to mix the rice with egg too early.
- Once the eggs look firm and close to being done, start folding the egg into the rice.
- Add Sriracha and mix until all rice is evenly coated.
This rice is great on its own or serve with Trader Joe's marinated Bulgogi meat. Add any protein such as chicken, Chinese sausage or shrimp to make the dish more hearty. Enjoy!

food (food) | crispy brussel sprout salad
If you've been reading my blog for awhile, you know that I like to re-create my favorite recipes from restaurants. Last week I filled my sushi craving at Sunda, but one of my all time favorite dishes there isn't sushi - it's the Crispy Brussels Sprout Salad. It's a warm salad served with a nuoc cham dressing and it's a dish I would have no shame licking plate clean. The craving for it lingered the rest of the week and I decided to make it on my own. Since cooking during the week is non-existent for me, I live for Sunday evenings when I have an afternoon to prep and can take time to make a quality meal. This dish uses the same dressing that I created for my Larb Gai recipe and is super healthy...well maybe without the fried shallots. Nevertheless, it's delicious!
Here's what you'll need:
- 1 bag of shredded brussels sprouts (Trader Joe's has a bag of these)
- 1 cup of shredded carrots
- 4 sliced shallots
- 1 pound of chopped cooked and peeled shrimp
- 1/2 tablespoon of sesame seed oil
- 1 tbsp of vegetable oil
- Juice from 3 limes
- 1/4 cup of sugar
- 2 tbsp of garlic chili paste (found in Asian food aisle)
- 4 tbsp of fish sauce (found in Asian food aisle)
- Salt
Directions:
- Heat over at 425 degrees
- Mix fish sauce, lime juice, sugar and garlic chili paste in a bowl with the chopped shrimp. Let it sit at room temperature while the brussels sprouts are cooking.
- In separate large bowl mix brussels sprouts, 1/4 of the shallots, carrots and sesame seed oil in a bowl. mix until all vegetables are coated evenly.
- Spread evenly on a broiling pan and place in oven for 15 mins (mixing vegetables halfway through cooking)
- In a small pan heat vegetable oil and fry remaining shallots until crispy (almost to the point that they're burnt)
- Place brussels sprouts on a plate topped with shrimp and shallots. Let the dressing from the shrimp soaked down into the vegetables and enjoy!
